Eye spy yummy peanut butter eyeballs
Get your peanut butter fix with these spooky yet delicious eyeballs. Sure to be a hit at any get-together.

INGREDIENTS:
1 1/2 cups peanut butter ( I like Reese's )
1/2 cup softened butter
2 cups confectioners' sugar
1 Tablespoon vanilla extract
18 ounces white melting chocolate
40 M&M's
blue and red food coloring
1 fine paintbrush
40 cupcake cups
1 sandwich bag or icing bag
DIRECTIONS:
1. Cream peanut butter and butter together.
2. Add vanilla and sugar, mix thoroughly.
3. Shape into 1 inch balls, placing them onto a non stick cookie sheet or wax paper and refrigerate for 30 minutes.
4. Lay out cupcake cups and melt chocolate accordingly.
5. Remove chilled balls and dip into chocolate. ( I used cooking skewers. ) Place dipped ball on to individual cupcake cup.

*If balls become to soft to dip, place back into fridge to chill.
6. Refrigerate balls once more for 30 minutes.
7. Mix blue food coloring into 2oz. of the melted chocolate. Place blue mix into a sandwich bag and cut a small tip or place in icing bag.
8. Remove chilled balls and place a dime sized dot on top of each ball. Follow up with M&M ( "M" side faced down)
9. Dip paintbrush into red food coloring painting veins onto the eyes.
10. Most important...ENJOY!!!

Through the generosity of Hairballsgirl, I have tasted these eyeballs and know firsthand of their scrumptious peanut buttery innards. They are indeed delicious!! Perfect for holiday parties, weddings, or just on-the-go snacks when an eyeball sounds good!
