| INGREDIENTS: |
4 cups Soba Noodles 6 Scallions, chopped 3 Eggs, beaten 1 cup Bean Sprouts 1 ounce Fried Rice seasoning Soy Sauce Sunflower Oil Food Coloring |

| DIRECTIONS: |
1. Boil the Soba Noodles in water with a small amount of Soy Sauce and a few drops of red, blue and black food coloring (You're looking for a dark burgundy). Simmer until desired tenderness. Drain.
| | 2. In a frying pan, pour a bit of sunflower oil and about 2 tsp. of soy sauce. When oil is very hot, add all of the scallions and bean sprouts. Add eggs a little at a time and mix constantly.
| | | 3. Add the noodles to the mixture in the frying pan. Add fried rice seasoning and enough oil to just lightly coat the noodles. Mix constantly and thoroughly for approximately 2-3 minutes. | | | 4. Serve on plate garnished with red-tip leaf lettuce | | |
