INGREDIENTS:
2 eggs (room temp)
1 cup milk
1 cup flour
2 dashes dried thyme
1 dash salt & pepper
1 ground breakfast sausage (Jimmy Dean or other but NOT reduced fat)
applesauce
1 dash paprika
DIRECTIONS:
1. Preheat oven to 350.
2. Make meatballs out of sausage 1- 1.5in wide and brown on all sides in a skillet. Save drippings for step 4.
3. Put meatballs in a (roughly) 8x10in baking pan spaced out fairly evenly.
4. 5 tablespoons of drippings would be ideal, but you will probably have to add vegetable oil to the pan, mix it with the sausage grease, then pour drippings into baking pan.
5. In a big bowl beat eggs until fluffy, beat in milk, flour, thyme, paprika, salt & pepper until light and bubbly.
6. Pour mixture around meatballs in baking pan and cook for 20-30min or until you can insert a tooth pick and have it come out clean.
7. Cut into squares with spatula and serve with applesauce.
