| INGREDIENTS: |
2 eggs (room temp) 1 cup milk 1 cup flour 2 dashes dried thyme 1 dash salt & pepper 1 ground breakfast sausage (Jimmy Dean or other but NOT reduced fat) applesauce 1 dash paprika

| DIRECTIONS: |
| 1. Preheat oven to 350. | | | 2. Make meatballs out of sausage 1- 1.5in wide and brown on all sides in a skillet. Save drippings for step 4. | | | 3. Put meatballs in a (roughly) 8x10in baking pan spaced out fairly evenly. | | 4. 5 tablespoons of drippings would be ideal, but you will probably have to add vegetable oil to the pan, mix it with the sausage grease, then pour drippings into baking pan.
| | 5. In a big bowl beat eggs until fluffy, beat in milk, flour, thyme, paprika, salt & pepper until light and bubbly.
| | 6. Pour mixture around meatballs in baking pan and cook for 20-30min or until you can insert a tooth pick and have it come out clean.
| | | 7. Cut into squares with spatula and serve with applesauce. | |
